Jamaicans love being creative in the kitchen when it comes down to cooking and inventing new recipes. French toast is not new to our home land or foreign countries but here is a little twist on the Jamaican french toast recipe island-style. It is simple breakfast meal when you are on the go.
Jamaican French Toast recipe:
8 pieces of bread
2 large eggs
1 cup milk
1/2 glass coconut milk
2 Tbsp. sugar
1 Tsp. floor cinnamon
1 Tbsp. vanilla extract
1 Tbsp. butter divided
Coconut flakes, chopped up mangoes, and honey (to garnish)
For the Mango Compote:
1/2 glass water
1/2 glass sugar
1/2 glass fresh lime juice
1/2 Tsp. grated lime zest
2 large ripe mangoes – peeled, pitted and diced
Make the mango compote: incorporate mangoes, lime zest, lime drink, water and sugars in a medium saucepan over low fire, stirring gently to mix. Leave to simmer for a few moments. Turn off temperature and reserve.
Make the french toast: whisk eggs and then 6 substances in a medium dish until combined. Drop both edges of the loaf of bread into egg blend and reserve.
Melt 1/2 tablespoon butter in a huge nonstick skillet or griddle. Add a loaf of bread slices and bake in the hot, melted butter for 30 to 45 moments on each aspect or until gold. Repeat with left over butter and second bakery slice.
Drizzle with honey, coconut flakes, and sliced up mango; help with mango compote.
